Cold days always end with me in the kitchen at some point baking something. Today, I realized that I had a bit of flaxseed meal that needed using. So, I looked in the archived recipes that I will bookmark while browsing the web. I had to laugh as it was amusing that the chef of this recipe created it for that exact reason! I’m thinking minimal ingredients, using flaxseed meal, minimal preparation, and cooking time. This one fits the ticket.
I had about an hour before I needed to start dinner and I was a bit bored….. spring and warm weather can NOT get here fast enough!Can you tell I am much more an out on nature type person? ππ
I almost forgot to take photos as I was mixing the ingredients. Below is after everything was in the bowl. One thing I didn’t have in the list of ingredients is raisins. I didn’t think about the stash of Craisins that I always keep on hand for tossing in a salad or baking in breads. So, they will be added to the next batch. I used honey instead of maple syrup. It is my goto sweetener. Would love to have maple syrup, but it is just far too costly here in the south for my frugal mind to allow me to purchase. Everything else is as the recipe directs. The nut butter is peanut as it is the least expensive and what I had on hand. I do want to get some almond and even pistachio butter to try at some point.

This is not a stiff or thick batter. It easily dropped off a small serving spoon to fill one-third of each muffin slot. Use a regular cupcake tin, not a large muffin one. I got exactly 12 servings as the recipe states.

They baked the full 22 minutes called for in the instructions. This might be because the creamy peanut butter used was more oily than average or the fact that there were no raisins. I watched for the tops to be dry, as the recipe stated. They do not rise but are much thicker than a cookie.

I can’t describe the flavor and texture. They are unlike anything I’ve eaten. They are absolutely delicious and very filling. My husband was quite impressed. That’s high praise coming from a foodie! The texture is similar to a very moist muffin but more firm. The taste will change depending on the choice of add-ins. I think dark chocolate chips would be amazing.
I would love to hear your thoughts if you try this recipe. In the mean time…….
