Remember all those strawberries….

That I froze whole last spring? We are now beginning to enjoy the fruits of that labor. Tonight dinner was a bit later than normal because my inner baker jumped out last minute in the form of Strawberry Crumble! Not just any old crumble, but healthy for you crumble. Nutritious oat flour and brown sugar made up the crumble while the berries were mixed with a tad of white sugar and corn starch.

First I needed to set the frozen berries in warm water to thaw enough to safely slice them all in half.

These are very large berries. I used two quart bags of them. The next step was to drain the water and toss with 1/4 cup white sugar and 2.5 Tablespoons corn starch. Place in baking dish where they rest while I combined the crumble ingredients.

Mix together the following crumble ingredients: ½ cup brown sugar
½ cup oat flour
¾ cup rolled oats
¼ teaspoon salt
¼ cup melted butter

Evenly distribute the crumble mixture over the strawberries.

Bake at 350 degrees for 50 to 55 minutes until edges are browned.

Let it cool then enjoy. Delicious and healthy.

You can always add ice-cream when served. For us, we simply enjoyed the rich fresh warm strawberry flavor unhindered.
