Not your granny’s leftovers

It has been years since I had to deal with leftovers at Thanksgiving. The last many years since the kids were grown and gone we have visited with my lifelong best friend and her family for this holiday. I contribute Watergate salad in memory of her mother that always made it and usually add homemade cranberry sauce and a dessert or two. The great part is I can come away full from an amazing dinner without dragging left overs home to deal with.

We actually ate out at a favorite restaurant on Friday because we ran up to the local yarn shop for me to learn a new stitch on the socks I’m knitting. We ran later than expected visiting with the shop owner and customers and it was too late to get home and cook. The Rail Public House serves delicious shrimp tacos which was more than enough after Thursday.

So today while many are still dining on leftover turkey and dressing I decided to grill pork chops. The weather was beautiful and warm which always tempts me to crank up the grill. Randy was thrilled with the end results that included holidayish items. I made a breakfast bread yesterday that called for fresh cranberries so I used the rest of the bag to make fresh homemade whole cranberry sauce for two. I popped some Brussels sprouts onto the grill with the chops and baked 2 sweet potatoes in the microwave while watching the grill.

One of Randy’s favorite holiday foods is sweet potatoe casserole. I always add turbinado sugar and butter to the baked potatoes and opted to add chopped pecans also for the illusion of the casserole😁. With a slice of that aforementioned breakfast bread for dessert…. that makes for an extremely healthy delicious dinner.
