I have been craving a peanut butter cookie for a while now. They are pretty healthy unless they call for white enriched flour. I wanted the most healthy version I could find. This is when I truly love the ability to search the internet. I’m building a digital bookmarked cookbook of all types healthy food items recipes. I got the mother load of goodness, healthy and absolutely finger licking GOOD with this one for flourless peanut butter oatmeal chocolate chip cookies!
They are fast and so very easy with my handy dandy tiny cookie scoop. The Recipe creator states it makes 1.5 dozen two inch 🍪. With my teaspoon scoop I got 2.5 dozen with two extra cookies that hubby and I scarfed down as soon as they were cool enough to touch 😋. They are good sized and so filling that one is plenty after a meal.

The parchment paper means less cleanup. I simply let the pan cool before returning it to the cupboard.

The end result is soft, gooey chip, chewy cookies. The flavor is exactly the same as a warm Reese cup! The oatmeal lends the fullness and contentment felt after consuming these wonderful little jewels.
