Trip around the world in a plate

We don’t waste food here in our little home on the mountain. It is very rare to have left overs since I cook meals for two. But ever so often there are when I prepare a batch of something like biscuits or a pot of something that gets bigger than expected.

Tonight was easy peasy for the cook😁. I had placed some of the wonderful Alaskan sockeye Salman in the fridge last night to thaw. It went onto the grill while the rest of the meal was heated up. I’m still learning what a portion size of kasha (buckwheat), a Russian staple, is so there was left over to go with the Mediterranean Tzatziki sauce that doesn’t have long fridge life. Good old southern butter peas, the healthy version of the famous Birmingham, Alabama cheese biscuits and a few sticks of celery for crunch factor rounded out the meal.

This made a beautifully colorful display packed with flavorful nutrition and so very healthy.
