Cheese biscuits for the win!

I’m fairly certain the Red Lobster restaurant is a nationwide chain. If there isn’t one in your area, you have missed out on a treat. It has been many years since we dined there but we always looked forward to their cheesy biscuits served in leu of yeast rolls that many other restaurants bring to the table to nibble on while waiting for your meal. Neither yeast rolls or these delicious biscuits are any where near healthy to consume. But that doesn’t remove the fact that both are delicious, especially for a bread lover like myself.

I got a hankering for those wonderful biscuits and remembered I had bookmarked a recipe for a healthy version of them to try at some point. Well, tonight was the night. They were so very easy and quick because it takes only one bowl and they are old fashioned drop biscuits……. no rolling out dough or cutting required. Pretty much toss ingredients into a large bowl and stir till combined. Scoop up a dollop and drop on the parchment paper lined baking dish.

The secret to the healthy version is using whole white wheat flour instead of the stripped of nutrients, diabetes forming “enriched” self rising or all purpose flour.

Lining the pan with parchment paper insures no sticking and minimal cleanup required.

After 15 minutes in the oven we have aromatic, hot, delicious fluffy cheese biscuits. I tossed the parsley and garlic powder into a cup with the topping butter to melt it. Probably should have sprinkled the parsley over the biscuits AFTER melting the butter and drizzling over them for a more uniform covering as stated in the Recipe. But it was just me and hubby for dinner and I was late getting it on the table so it wasn’t a biggy.

I had massive pork chops on the grill along with a potato medley of roasted vegetables I was having to watch over. The medley consists of small red potatoes, baby carrots, onion sprinkled with everything bagel seasoning and oregano coated with vegetable oil spray. Sliced a fresh juicy red tomato, added cold fresh water to drink and called it done.

The whole meal was amazing and hubby was happy as a clam with those cheese biscuits!
