I was looking for something different that we had not tried in baked goods today. There was a little time before I had to start cooking dinner. While missing a few ingredients for a couple things that sounded wonderful, I remembered I had Greek yogurt in the fridge that needed to be used when I saw this recipe.
Oatmeal Chocolate Chip Greek Yogurt Muffins is an amazing healthy version of sweet goodness overload. I tweeked the ingredients to my liking with half whole white wheat flour and half oat flour rather than all regular whole wheat flour. I will possibly use all oat flour next time around as that makes it more gluten friendly. I also used plain Greek yogurt since that is what was in the fridge and added a half teaspoon more vanilla extract. I also added a half teaspoon of expresso powder.

My other change is preparing a loaf rather than muffins and leaving off the streusel topping in preference to simply sprinkling extra chocolate pieces all over the top before baking.

I love these type recipes because of the variety of ingredients that can be changed or added for different flavors. I’m thinking maybe peanut butter chips or even mint chips for my favorite chocolate mint flavor!!
