So many choices…

…..for someone determined to eat delicious healthy foods. Last night was a fix it quick meal. So the goto on those days usually involves a fresh green veggie salad.

I had been baking, sketching and listening to a favorite podcast and the day got away from me. The results of all of those was a very productive, enjoyable day. But yeah I still needed to produce an evening meal worth eating.

There are a variety of vegetables slammed full of nutrients and wonderful taste and texture to give variety to meals. One of our favorite is what my daughter referred to in her childhood as baby cabbages! 😁 She loved their often bite sized portions. Well of course they weren’t really baby cabbages but actually Brussels sprouts. I raised my children to try all foods and then decide if they liked them rather than catering to the finicky ugh factor many children can develop to anything good for them. They rarely found anything they didn’t really like once they tried it which is a good thing.

Placing sprouts in a baking dish and laying chicken over them allows the juices in the meat to mingle with the spices on them which turns out a tender juicy wonderful dish. Last night I used a Montréal Chicken Seasoning on both sprouts and chicken. Making it from scratch avoids all the salt of commercial brands.

Then of course we had to have a slice of my daily baking. I made two loaves and placed one in the freezer for later. The delicious Expresso chocolate chip oat flour loaf was amazing as always. Below is minus the two slices we consumed before I thought to snap a photo😊.
