Another year

….of canning fig preserves came to a close today.  I managed 50.5 pints preserves and 6 pint syrup as the final total. That’s a couple pints short from last year but I still have 6 of those pints left so there are plenty. I’m just not certain we will get a second harvest to share with friends. Although it has been a very wet spring and summer for the area, we didn’t get as much here on the mountain.  Last year it felt like we lived in the tropics all spring into the fall. Figs thrive in hot humid rain. As much as I love figs, it is nice to be done with the daily twice picking and day long canning process. Sure does make for a satisfying feeling to see all those beautiful figs waiting to be consumed this winter. 

I’m thinking about making a run to one of the areas that have apple orchards to purchase enough to put up some apple butter. Just need a minute to rest from this last canning event.

Once I was done this morning,  I decided I had time to try a new Oatmeal cookie recipe.  I do believe this will be my goto recipe for a variety of cookies.  It was quick to make and there are so many addins such as nuts,  raisins,  craisins, chocolate chips, to change it up a bit in the future.

I followed the basic recipe for this batch and got over two dozen cookies. Love the spicy flavor. 

My love of baking has returned with knowing all these scrumptious goodies are healthy alternatives to white flour, sugar gorged junk treats.
