Another Hot Day….

….in the deep south. This type of extreme hot and humid, which actually is NOT normal for the area, much less the whole country….. doesn’t lean to much of an appetite with forced reduction in physical activity caused by the energy being sucked right out of a body. But, we still need to eat and consume life giving nutrients. I start looking for filling, nutritious meals that take minimal prep and are still appealing and deliciously satisfying.

Today was a scheduled grocery run on top of having repairmen in and about working on our ever troublesome internet service….. one day there will be fiber optics/5G OR a move to Starlink when it becomes available in our area in 2023…….. AND Finally much needed rain that came in the form of a downpour knocking the power off. There IS Something to be said for investing in a whole house generator recently. So a hectic day in all but still a need to prepare the evening meal.

I had fresh spinach that needed to be consumed before it goes bad and that was a start. If you have never had sautéed spinach at a Ruth’s Chris Steakhouse, child you are missing OUT! I hated spinach as a child and young adult. Don’t really remember when my tastes changed, but it is a favorite now that is prepared often here at home. Enough fresh butter heated in the skillet, dump the spinach in and let it cook till wilted, add salt and pepper to taste. My preference is a bit of pepper with no salt.

I also bought some Gorton’s boxed beer battered shrimp while out today with the intention of it being dinner tonight. While I love shrimp, fried boxed is not the norm. I just knew I would be worn out with the struggle of purchasing healthy groceries balanced with extreme high grocery prices thanks to the current regime. So my one small downfall can be overlooked this once 🙃😏.

I was thrilled to find fresh ripe USA grown Haas avocados and added those to the basket to go with the shrimp. All that was needed in addition was a few crisp crackers and what was left of 4th of July’s watermelon.

This was more than enough food for the meal and presented beautifully with all the bright varied food colors.

Our power has returned an hour earlier than expected and the internet is once again repaired. Now to go settle in to read for a while and relax.
