I miss this wonderful man and great patriot. We watched him on television regularly when I was a child. With today being America’s Independance day I thought it a perfect time to document this particular segment of one of his television shows. Red Skelton recites the Pledge of Allegiance His version brings tears to my eyes in my love of my country.
Today was a very laid back although not lazy day spent at home. I changed and washed the bed clothes for the coming week and knit on a project I’ve almost completed. I tend to lose track of time when I’m knitting so the day went by fairly quickly. The humid oppresive heat is still too much to enjoy any time outside other than checking on the grill ever so often as I prepared our July 4th celebration meal.
We love fresh wild caught salmon and recently purchased some from a small family owned business in Alaska. I thought today’s celebration was the perfect meal to try it for the first time. I highly recommend Wild Alaska Salmon and Seafood in both the freshness of the fish and the amazing way they package and ship in order for the customer to receive the frozen product in the lower 48.
I laid two portions out in the refrigerator last night to thaw slowly as recommended for use today. Then I set about this evening preparing the full meal of salad, potatoes, melon, salmon and dessert. First I sliced potatoes and onions onto tin foil sprayed with PAM while the grill preheated. A sprinkling of Everything Bagel season was all that was added before placing them on the grill.

While they cooked I prepared a vegetable salad of the standard green leaf lettuce, cucumber, tomatoes, carrots, celery. Then added a dash of sunflower seeds, sesame seeds and fresh bacon bits and shredded cheddar cheese.
Next it was time to place the salmon on the grill. These 6 ounce portion sizes are perfect. The meat is firm and a beautiful deep red. Nothing was added to mask the natural flavor of the salmon. My husband prefers his well done so it went on the grill after the potatoes were nearly done. I prefer my salmon rare so it went on last.

I added a few chunks of sweet watermelon to our plates to round out the meal. Having baked an expresso chocolate chip loaf yesterday dessert was taken care of for tonight. The fish was simply amazing and I’m thrilled we purchased 10lb. of portions to enjoy through the summer and fall. We will definitely be purchasing more in the future.
