Harvest Multitasking

Today was grocery day since the rain held off.  I’m in process of filling the freezer for this winter when ever I find a good deal.  I lucked up on a basket of stringless green beans for $6 at the little veggie stand. I’ll have to make another run for more at that price before they are gone. Today I knew I had a long day ahead of me and needed time to snap and blanch them to put in the freezer.  Snapping beans is such a relaxing thing to do when I do have time and we do love our green beans.

Another thing we love that is very good for the body is garlic.  I prefer purchasing American grown when ever possible so was thrilled to find it avaliable fresh in Publix today.  The one thing I always dreaded was having to peel the cloves before storing in the fridge.  Well, let me say… there is no more dread at all….. thanks to a dear friend hooking me up with this simple tool a couple years ago. If you don’t have one of these little tubes, it is a MUST in any kitchen where fresh garlic is used. So fast and easy to use.  Simply place several cloves in the silicon tube and roll it against the counter with your hand.  The cloves pop out of their skins from the friction . Now we have all the fresh garlic we desire without the fuss.  Roasted cloves of garlic are our favorite and so delicious….. almost like candy! I also tuck garlic around meats or in vegetables while cooking.

The strawberries were still on sale so I picked up another 10 packages with the intention of turning them into preserves tomorrow. I had to stem and wash them to condense into a couple bowls for the fridge until I could get to them. I had finished snapping the beans, got them blanched and bagged and decided to get that done next. Then after I put the garlic away I decided quarter the strawberries.

Next thing I knew I was pulling out the sugar and canning supplies AND this happened😁 ——– >

A simple recipe of 8 cups strawberries to 4.5 cups sugar and 2 tablespoons lemon juice. I had a lot of cups of strawberries. These two pots held all of 3.5 batches.

Dare I say I am a wee bit tired now…….. feeling very accomplished 🍓🍓🍓🍓🍓 but tired. I’ll sleep good tonight!
