Father’s Day

Another day of celebrating Father’s has come and gone. We had a marvelously low humidity, breezy evening yesterday to just relax on the deck until after sunset. That’s rare in these days of severe heat and humidity that has covered the country the last month. So it was a very good start leading into today. A quick breakfast, then off to church we went this morning. Sundays aren’t good days for eating out when we prefer higher quality non-chain restaurants that are usually closed on Mondays and Sundays so this afternoon I spent preparing an early dinner for two to celebrate my husband’s father status while he relaxed. I had run out yesterday and purchased a favorite dessert at one of our favorite restaurants so it was just a matter of throwing together the main meal. This flourless chocolate cake is amazing and really healthy with no gluten. Add a cup of high altitude, shade grown Nicaraguan French pressed coffee and it is simply delectable!

The side dishes consisted of a fresh brocoli salad to provide fiber to this health conscience dinner. I added sunflower seeds, craisins, low sodium real bacon pieces, red onion and a Greek plain yogurt sweetened with honey dressing.

Then I fried up some fresh yellow corn. Yes it is healthy which confuses people not from this area of the country. It is a southern tradition that, believe it or not, IS healthy. I use my trusty iron skillet, add a small amount of real butter, cut the corn from the cob by slicing just the kernel caps first, then cutting again to get the rest of the kernel. This releases all those wonderful juices that cook down to a caramelized golden goodness. Add salt and pepper to taste while cooking on the stove top at a medium heat. Stir occasionally scraping the skillet to keep the corn from sticking. It is ready to eat once you see all that beautiful golden crunchy color.

Then comes the main portion of the meal. I had the coffee steeping, the corn on low while I heated the grill out on the deck. It was a shame the heat was returning because I would have liked for us to have been able to dine outside. But it was still not so warm that I couldn’t comfortably grill New York Strip steaks for two. Randy and I chatted relaxing on the deck while I kept an eye on the steaks.

All in all it was a very quiet relaxed day and a wonderfully delicious meal. Happy Father’s Day to all.
