Anyone that knows me even a little, knows I LOVE seafood! One of my all time favorites is boiled shrimp pretty much bred into me from all those long summer days spent in Key West, Florida as a child and teen. With prices continuing to hit record highs along with my determination to eat healthy wild caught varieties of seafood only has left me sorely lacking for so many months I’ve lost count. Well, today I feel like I struck gold. On my regular grocery run I found not just wild caught, but Argentina red wild caught on Sale! These beautiful shrimp pack flavor as large as their jumbo size. With most varieties of wild caught shrimp ranging from $15 to $20 a pound, I couldn’t believe these were only $7.99!!! Guess what we had for dinner tonight 🤗? I will be going back to the store this weekend to get a few pounds for the freezer at that price.
The other wonderful find was beautiful, large sweet strawberries. They also were on sale at 3 1lb containers for $5. So I snapped up two of those immediately. I had a good start on the evening meal.
I included the last of that large flavorful cantaloupe. Sadly, there was no more at the veggie stand. Then I fried a batch of fresh summer squash in a touch of olive oil with a couple tablespoons of course stone ground cornmeal. This made for a delightful colorful fun Healthy meal. I relaxed after dinner with a cup of hot peppermint tea and called it a day.
