Fresh Produce plus Fiber

We are fortunate to live in an area that has what we call “Veggie” stands…… small businesses run by farmers that sell their own homegrown produce and more from area farmers. I visit one in particular regularly during the growing seasons and am especially grateful to have this option in this day and time of constantly soaring food prices. Having recently remodeled and organized a tool room, our plan is to add another upright freezer to the current one there in order to increase storage for more produce and meat to get us through the times of slight that may come.

The bounty from these veggie stands while plentiful, fresh, delicious and modestly priced, which is a blessing any time, provide a delicious healthy meal. The tomatoes are large and sweet as is the cantaloupe. Purple hull peas are plentiful, full of healthy fiber and a favorite of our house. We enjoy slices of fresh onion to compliment the peas. The only addition other than the baked chicken is a slice of my freshly baked expresso, chocolate chip bread made with oat flour and fresh duck eggs to add more fiber to our meal.
