Who doesn’t Love asparagus!

I have grown a lot of fruits and vegetables in my lifetime. One I never have tried is asparagus simply because it takes three years to produce. I was too busy feeding a growing family to wait that long for a crop. Now that I’m a long time empty nester, I am overrun with wild deer and rabbits to even attempt such a feat. It would be a waste of time whiteout a wildlife secure spot to grow any food item.

So suffice it to say I was shocked and thrilled to find USA grown in Michigan absolutely stunningly gorgeous asparagus in the produce section of our local Publix this week. I don’t buy Mexican produce forcing me to wait till I see it grown in Peru. But even then, it is very thin and at least a 1/3rd of the stalk is wood texture. I have never seen USA grown asparagus in a grocery store. I snatched up a batch to cook today. A shame I can’t store fresh for weeks so I could have bought more. But tonight we feasted!

Eating healthy doesn’t mean hours in the kitchen. This was a fairly quick meal. There were already homemade oat and almond flour lemon poppyseed muffins baked this week. I added a fresh salad with local grown pickled okra, always with healthy varieties of salad dressing like raspberry walnut vinaigrette and broiled ground chuck patties with homemade whisky peach BBQ sauce gifted from my brother. This is not only healthy for cholesterol but salt intake as well.
