Healthy fish choices

I have always loved fish of all varieties. Must be in my Scot, Irish and British genes. Having been raised in a land locked area with many a river rat cousin, aunts and uncles, river catch was a norm with all types of fried fish served up for dinner. Catfish, brim, bass…. what ever came out of the river was immediately dredged in cornmeal and pan fried. Can you tell I was obviously raised in the deep south?My father also had a fascination with Earnest Hemingway so two weeks of every summer of my childhood was spent on Key West island consuming seafood… boiled shrimp at Sloppy Joes on the corner of Duval and Greene Street was a daily occurance. While boiled shrimp is still high on my list of favorite seafood, I have fallen away from the fried fish of my childhood in search of healthful eating. In that process I found that grilled, broiled and baked fish is so much more satisfying because the flavor of the fish is not masked in oil and cornmeal. I also lean more towards ocean fish than river catch. Tuna was a staple of my childhood in the form of patties…. yes fried… so while I can eat a grilled tuna filet, it is not on my radar in the taste and health conscience choices. One of my all time favorite fish is salmon, never farm raised…. my reasons would consume a whole post on its own. I always search out wild caught salmon, usually Alaskan versions. Wild salmon is one extremely healthy seafood choice. The omega-3 fatty acids, selenium and protein are amazing super nutrients. Add all that to the delicious taste and it is my goto seafood of choice.

One of my most favorite breakfast meals is what I call a glorified lochs and bagel. It consists of a whole grain everything bagel, cream cheese, tomato, cucumber, lettuce, red onion, and thin sliced wild lox salmon. Very filling, extremely healthy ingredients and a satisfying start to the day. Add a side of fresh fruit, always black Nicaraguan coffee and that’s a meal made for Kings.
