When I’m learning to cook with a new item and I don’t realize half a cup is all that’s needed for two people, it gives me the the opportunity to get creative with the other cooked half cup the next day. While I generally cook only enough to serve two, I was raised and raised my children on meals made from leftovers. It took me years after my children were grown to learn how to cook for only two and I have always felt food is important and not to be wasted. With all that said, I was actually excited for this chance to get creative again and come up with something different with the Kasha/buckwheat tonight.
I planned around ground chuck patties and made a summer salad of fresh tomatoes, cucumber, celery, carrots, parsley and basil marinated in Italian dressing. I whipped out one of my trusty iron skillets and heated almond milk with salt and pepper, added oat flour and just a couple tablespoons whole white wheat flour to thicken. You can use cornstarch rather than whole wheat or more oat flour but I wanted it to thicken quickly tonight so opted for the wheat.

Then I heated the Kasha in the microwave. This stuff heats really fast and stays hot! Pour the gravy over the Kasha and ground chuck patty and that makes our meal tonight.
