In keeping with my healthy eating lifestyle, we had homemade buckwheat pancakes with homemade fig syrup and black coffee for dinner tonight.
I have made them before using only buckwheat flour which is very flavorful and extremely filling. That in and of itself is not a bad thing. I was just looking for something slightly lighter for tonight. So while I’m working on recipe size for just two people I decided to half the original recipe buckwheat flour and add whole white wheat flour for the other half for tonight. It still made quite a few pancakes but they were much more manageable for a single meal as they were slightly lighter.
