In my quest to eat even more healthy than I already do, I’m learning about better ways to bake. Enriched white flour has no nutritional value so I’ve completely removed it from our kitchen. I’ve replaced it with mostly oat flour and the occasional whole white wheat. Buckwheat/ kasha is excellent for pancakes as well. My most favorite recipe to date for breakfast bread is this oat flour, expresso chocolate chip loaf. I can’t express how amazing the taste, not to mention the satisfaction of feeling full in a healthy way.
